I&#8217;ve made this so many times and although I&#8217;d normally either use an icing drizzle or a glaze drizzle, I thought it would be fun to go all in with both for this special day. Feel free to just pick just one of the drizzles\u00a0but if you really want this to be a strong and zesty cake then I&#8217;d suggest\u00a0going with both.<\/p>\n<p>To create the recipe I took my basic Lemon Drizzle recipe (<em>I&#8217;m not entirely sure where it originated from but it&#8217;s super easy<\/em>) and gave it a very simple boozy twist. My family are all fans of a traditional Lemon\u00a0Drizzle but it&#8217;s even better with a shot of your favourite gin. I tend to <strong><em>double this recipe\u00a0<\/em><\/strong>if I have guests coming over otherwise I like to keep it neat like this to ensure it soaks up all the gin.<\/p>\n<p>I&#8217;ve seen lots of people sharing their versions of gin infused cakes but I thought it was about time that I got involved too. So, with a little help from the lovely folk at <a href=\"http:\/\/www.31dover.com\/malfy-gin-con-limone-75cl.html\">31Dover I have found a new gin to fit perfectly with this\u00a0r<\/a>ecipe.<\/p>\n<p><a title=\"Malfy Lemon Gin\" href=\"https:\/\/www.flickr.com\/photos\/daisyhatami\/34414614353\/in\/photostream\/\" data-flickr-embed=\"true\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter\" src=\"https:\/\/c1.staticflickr.com\/5\/4244\/34414614353_dd1877489d_c.jpg\" alt=\"Malfy Lemon Gin\" width=\"800\" height=\"530\" \/><\/a><\/p>\n<p>When you&#8217;re deciding which gin to use for this cake, you can simply use whatever you have to hand. Alternatively, you can give it a little extra thought and pick something that will really compliment the cake\u00a0well. On this occasion <a href=\"http:\/\/www.31dover.com\/malfy-gin-con-limone-75cl.html\">I&#8217;m using a gin which is new to me, Malfy<\/a>. It&#8217;s an Italian gin with a real lemony focus.\u00a0I&#8217;ll do a full review and video about this gin next week but just as a quick overview, don&#8217;t open up this bottle expecting a classic gin. This gin is <strong><em>all<\/em><\/strong> about the lemon.\u00a0It&#8217;s made in Turin with local lemons from the Amalfi Coast. Just looking at the bottle makes me wish I could be transported straight to Italy.<\/p>\n<p>Right, let&#8217;s get started with\u00a0the cake.<\/p>\n<p><a title=\"Double Gin Drizzle\" href=\"https:\/\/www.flickr.com\/photos\/daisyhatami\/35183846066\/in\/photostream\/\" data-flickr-embed=\"true\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter\" src=\"https:\/\/c1.staticflickr.com\/5\/4209\/35183846066_8b9210b2c2_c.jpg\" alt=\"Double Gin Drizzle\" width=\"531\" height=\"800\" \/><\/a><\/p>\n<p><strong><em>Ingredients:<\/em><\/strong><br \/>\n<em>2 eggs<\/em><br \/>\n<em> 100g butter &#8211; I used dairy free\u00a0<\/em><br \/>\n<em> 100g sugar<\/em><br \/>\n<em> 100g self-raising flour<\/em><br \/>\n<em> Zest of 1 lemon<\/em><\/p>\n<p><em>Double the recipe if needed.<\/em><\/p>\n<p><em>Drizzle 1:<\/em><br \/>\nJuice of 1 lemon<br \/>\n1 or 2 shots of Malfy Gin &#8211; eyeball it, it&#8217;s much more fun<br \/>\n25g sugar<\/p>\n<p><em>Drizzle 2:<\/em><br \/>\n100g icing sugar &#8211; adjust according to consistency<br \/>\nMalfy Gin &#8211; 1 shot or maybe 2, it all depends on your personal preference<br \/>\nJuice of half a lemon<\/p>\n<p><em>This cake works perfectly well with just 1 of the drizzle options but if you&#8217;re looking for something a little stronger then use both.\u00a0<\/em><\/p>\n<p><strong><em>Method:\u00a0<\/em><\/strong><\/p>\n<div class=\"tab-content hidden-tab-content\">Start things off by setting your oven to 180\u00b0.\u00a0Pick out your favourite mixing bowl and combine\u00a0together the butter and sugar. One at a time add the eggs into your mixture and keep mixing &#8217;til they&#8217;re combined.<\/div>\n<div class=\"tab-content hidden-tab-content\"><\/div>\n<div class=\"tab-content hidden-tab-content\"><a title=\"Lemon Zest\" href=\"https:\/\/www.flickr.com\/photos\/daisyhatami\/35223672325\/in\/photostream\/\" data-flickr-embed=\"true\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter\" src=\"https:\/\/c1.staticflickr.com\/5\/4272\/35223672325_9f60f1c98b_c.jpg\" alt=\"Lemon Zest\" width=\"800\" height=\"534\" \/><\/a><\/div>\n<div class=\"tab-content hidden-tab-content\"><\/div>\n<div class=\"tab-content hidden-tab-content\">\n<p>Grate the zest of 1 lemon into the bowl. Make sure you don&#8217;t over-zest the lemon, you don&#8217;t want to get\u00a0the white part of the skin into your mixture as it&#8217;s quite bitter.<\/p>\n<p>Sieve\u00a0the flour into your bowl and mix everything together.<\/p>\n<\/div>\n<div class=\"tab-content hidden-tab-content\">\n<p><a title=\"Cake Mix Gin Cake\" href=\"https:\/\/www.flickr.com\/photos\/daisyhatami\/35058202122\/in\/photostream\/\" data-flickr-embed=\"true\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter\" src=\"https:\/\/c1.staticflickr.com\/5\/4195\/35058202122_9d84c71c97_c.jpg\" alt=\"Cake Mix Gin Cake\" width=\"800\" height=\"534\" \/><\/a><\/p>\n<p>Take a loaf tin and line it with parchment paper before carefully pouring your mixture into it.<\/p>\n<p>Pop the tin into the oven (180\u00b0) for\u00a0around 30 minutes. Make sure you keep an eye on the cake and adjust the time according to your over.<\/p>\n<p>Take a knife, or something pointy and stick it in the middle. If it comes out a little gooey then pop your cake back into the oven. This is going to be poured over the cake while it&#8217;s still warm.<\/p>\n<p><a title=\"Gin Glaze for Lemon Cake\" href=\"https:\/\/www.flickr.com\/photos\/daisyhatami\/35223663645\/in\/photostream\/\" data-flickr-embed=\"true\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter\" src=\"https:\/\/c1.staticflickr.com\/5\/4239\/35223663645_1fe6b3b3de_c.jpg\" alt=\"Gin Glaze for Lemon Cake\" width=\"800\" height=\"534\" \/><\/a><\/p>\n<p>Pop the cake onto a stand with a tray underneath &#8211; that&#8217;s going to catch all the excess drizzle. Then poke lots of little holes all over the cake. The more the better, you want this cake to be super moist. Mix it all together and if the consistency is a little thin then add a little more icing sugar.
