They always have such a good selection available, especially if you&#8217;re looking for\u00a0<em>in-season\u00a0<\/em>fruit. I find\u00a0their fruit is always\u00a0ripe and full of flavour. Many supermarkets and even local markets can have some really bland fruit.<\/p>\n<p>Over the summer M&amp;S asked if I&#8217;d like to whip up a couple of recipes to share here on PGT. As a big fan of the brand I thought this would be a lot of fun. It&#8217;s always extra fun to collaborate with brands I love and use on a weekly basis.<\/p>\n<p>This not a sponsored post, they simply sent through a bunch of ingredients and directed me to their <a href=\"https:\/\/www.marksandspencer.com\/s\/food-to-order\/adventures-in-food\/best-in-season-cherries\">Best In Season recipes.<\/a>\u00a0I&#8217;ll be sharing a few fruity recipes with you over the next week but have decided to separate them into their own posts.<\/p>\n<p>Today we&#8217;re going to make a\u00a0Cherry Pisco Sour.<\/p>\n<p style=\"text-align: left;\"><a title=\"Pisco Bottle\" href=\"https:\/\/www.flickr.com\/photos\/daisyhatami\/45867556761\/in\/photostream\/\" data-flickr-embed=\"true\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter\" src=\"https:\/\/farm2.staticflickr.com\/1967\/45867556761_9f414dcf51_b.jpg\" alt=\"Pisco Bottle\" width=\"1024\" height=\"736\" \/><\/a><\/p>\n<p style=\"text-align: left;\"><strong><em>What you need to make 4:<\/em><\/strong><\/p>\n<p style=\"text-align: left;\"><em><span class=\"bold\">250ml<\/span>\u00a0pisco<\/em><br \/>\n<em><span class=\"bold\">200g<\/span>\u00a0pack of M&amp;S cherries pitted<\/em><br \/>\n<em><span class=\"bold\">100g<\/span>\u00a0caster sugar<\/em><br \/>\n<em><span class=\"bold\">4-5<\/span>\u00a0limes, juiced, to give 100ml lime juice<br \/>\n<\/em><em>Lime zest to garnish<\/em><br \/>\n<em><span class=\"bold\">3<\/span>\u00a0large eggs, separated, to give 100ml egg white<\/em><br \/>\n<em>A few drops of Angostura Bitters<\/em><\/p>\n<p style=\"text-align: center;\"><a title=\"Infusing Pisco Overnight\" href=\"https:\/\/www.flickr.com\/photos\/daisyhatami\/30928427747\/in\/photostream\/\" data-flickr-embed=\"true\"><img decoding=\"async\" loading=\"lazy\" src=\"https:\/\/farm2.staticflickr.com\/1947\/30928427747_e0a29bc0a1_b.jpg\" alt=\"Infusing Pisco Overnight\" width=\"1024\" height=\"683\" \/><\/a><\/p>\n<p style=\"text-align: left;\"><strong><em>Method:<\/em><\/strong><\/p>\n<p style=\"text-align: left;\">Start by putting the pisco and cherries into a large jug and covering with clingfilm. Leave them to infuse overnight or if you&#8217;re a little\u00a0impatient, 4 hours will do the trick.<\/p>\n<p style=\"text-align: center;\"><a title=\"Infusing Pisco\" href=\"https:\/\/www.flickr.com\/photos\/daisyhatami\/45867555691\/in\/photostream\/\" data-flickr-embed=\"true\"><img decoding=\"async\" loading=\"lazy\" src=\"https:\/\/farm5.staticflickr.com\/4877\/45867555691_00b23cfc54_b.jpg\" alt=\"Infusing Pisco\" width=\"1024\" height=\"678\" \/><\/a><\/p>\n<p>When you&#8217;re ready to make your Pisco Sour you&#8217;ll need to strain the liquid. Don&#8217;t forget to reserve some of the macerated cherries to use as a garnish.<\/p>\n<p style=\"text-align: left;\"><a title=\"Pisco Sour Prep\" href=\"https:\/\/www.flickr.com\/photos\/daisyhatami\/30928427957\/in\/photostream\/\" data-flickr-embed=\"true\"><img decoding=\"async\" loading=\"lazy\" src=\"https:\/\/farm5.staticflickr.com\/4834\/30928427957_c5eef29d8d_b.jpg\" alt=\"Pisco Sour Prep\" width=\"1024\" height=\"652\" \/><\/a><\/p>\n<p style=\"text-align: left;\">Next it&#8217;s time to make a sugar syrup. Put 100g of caster sugar into a saucepan with 100ml of water. Bring to the boil then simmer &#8217;til the sugar has dissolved.
