  • 250 grams paneer (Indian cottage cheese)
  • 500 grams fresh spinach (palak)
  • 1 large onion, finely chopped
  • 2 medium tomatoes, pureed
  • 1/2 inch ginger, grated
  • 3-4 cloves garlic, minced
  • 1-2 green chilies, finely chopped
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon coriander powder
  • 1/4 cup fresh cream
  • 2 tablespoons oil
  • Salt to taste
  • 1/4 cup water
  • Fresh coriander leaves, chopped, for garnishing

Prepare the Spinach

Firstly, before preparing the dish wash spinach thoroughly in cold water to ensure the removal of any dirt or impurities. Following this, blanch the spinach by boiling it for 2-3 minutes and carefully drain it. Moreover, to retain its vibrant green color and stop further cooking during blending, transfer the spinach immediately into ice-cold water. Finally, blend the drained spinach into a smooth puree using either a blender or food processor before setting it aside.

Prepare the Paneer

The paneer should be cut into small cubes and kept aside. Indeed, for an added layer of flavor and texture, shallow fry the paneer cubes in a little oil until they turn golden brown. Following this step is optional, and can be skipped if soft paneer is preferred.

Make the Gravy

Heat oil in a large pan over medium heat. Then once the oil is hot enough, add the cumin seeds. Moreover, let them sizzle for a few seconds. After that, proceed to add the chopped onions, ginger, garlic, and green chilies into the pan. Sauté this mixture until you get golden-brown onions. Then add the tomato puree to the pan, and let it cook for 2-3 minutes. Then, add turmeric powder, red chili powder, coriander powder, and garam masala and stir it till the masala blends well. Keep cooking until the oil starts separating from the masala.

Add the Spinach Puree

Next, the spinach puree should be poured into the pan and nicely mixed with the masala. Following this sprinkle some salt according to your taste. Moreover, cook everything for around 5-7 minutes over medium heat while stirring occasionally.

Add the Paneer

At this time, add paneer cubes gently to the spinach gravy, and mix well. Afterwards, cover the pan with a lid and let it cook on low heat for 5-7 minutes. Certainly, this will allow the paneer to absorb all the delicious flavors of the gravy.

Finish with Cream

Finally, add the fresh cream to create a decadently creamy texture. Then let it cook for an additional 2-3 minutes before turning off the heat.

Garnish and Serve

At this time, the palak paneer should be transferred to a serving dish, and in addition to this garnish with chopped coriander leaves. Moreover, this dish goes best with Indian bread like naan, roti, or paratha, but steamed rice works just as well. Finally, serve it hot for maximum enjoyment!
