Ingredients

  • 1 cup semolina (rava)
  • 1 cup yogurt (curd)
  • 1/2 cup water
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1 tablespoon oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon chana dal
  • 1 teaspoon urad dal
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon grated ginger
  • 1 green chili, finely chopped
  • 1 sprig curry leaves
  • 1/4 cup chopped coriander leaves
  • 1/4 cup grated carrot
  • 1/4 cup cashews, broken into pieces

Instructions

  • In a pan, dry roast the semolina (rava) over medium heat for 3-4 minutes until it turns slightly golden and aromatic. Following this, remove from heat and let it cool down.
  • In a large mixing bowl, combine the roasted semolina, yogurt, and water. In addition to this mix well to form a thick batter. At this time, Allow the batter to rest for 15-20 minutes.
  • While the batter is resting, heat oil in a small pan. Following this add mustard seeds, chana dal, urad dal, and cumin seeds. Then Cook until the seeds start to splutter and the dals turn golden brown.
  • Next add the grated ginger, chopped green chili, curry leaves, and broken cashews to the pan. Sauté for 1-2 minutes until the cashews are golden brown.
  • Following this pour the tempering mixture into the semolina batter. Then add salt, chopped coriander leaves, and grated carrot. Finally, Mix well to combine all the ingredients.
  • Just before steaming, add the baking soda to the batter and mix gently.
  • Firstly, Grease the idli moulds with a little oil. Pour the batter into the moulds, filling each cavity about 3/4 full.
  • Place the idli plates in a preheated steamer and steam for 12-15 minutes, or until a toothpick inserted into the idli comes out clean.
  • Finally, Remove the idli moulds from the steamer and let them cool for a few minutes. Then, using a spoon or knife, gently remove the idlis from the plates.
